Coconut Flour Pancakes

Introducing the Ultimate Coconut Flour Pancakes!

Prepare to be amazed by these mouthwatering pancakes that have unrivaled status in our breakfast repertoire! Fast, simple, and oh-so-delicious, this recipe is a guaranteed hit that you'll commit to memory in no time. And when I say quick – I mean it! Whipping up an incredible batch is such a breeze, you won't believe it! Trust me on this one.

The best part? These a gluten free and the perfect base to so many different topping combinations. Looking for added protein? We like to add peanut butter to the top of ours!

Equipment Used:

Measuring Cups & Spoons – stainless steal is my favorite for an accurate measurement and good durability.

Mixing Bowls – a good set of nesting stainless steel mixing bowls with lids.

Rubber Spatula – this is the set that I have, they work great and the holder matches well in any kitchen

Stainless Steel Pan – this is the pan I have, I use it for so many recipes!


Recipe:

PREP TIME:

5 Minutes

COOK TIME:

5 Minutes

TOTAL TIME:

10 Minutes

SERVINGS:

6 small pancakes


INGREDIENTS:

  • 3 eggs

  • 2 tbsp olive oil

  • 2 tbsp maple syrup

  • 1/4 c coconut flour (I use this Coconut Flour)

  • 1 tsp cinnamon

  • 1/2 tsp baking powder

  • dash of sea salt


INSTRUCTIONS:

  1. Mix the eggs, olive oil, and maple syrup together.

  2. Add in the coconut flour, cinnamon, baking powder and sea salt. Mix until combined. The coconut flour with thicken up.

  3. Heat a pan or griddle over medium heat. I grease the pan generously with grass-fed butter. Scoop the batter onto the pan - this recipe makes about 6 smaller pancakes. Flip the pancake when the bottom starts to turn golden brown.

  4. Serve with your favorite toppings! Ours include peanut butter, whipped cream, maple syrup, fruit, etc!
